Uptown Sweet Potatoes

- 1 medium sweet potato (unpeeled)
- 1/16 teaspoon Allspice (or cinnamon)
- 1 teaspoon honey
Preheat oven to 300°F. Place unpeeled sweet potato on baking sheet. Bake for 1 hour, or until the middle of the potato is penetrable with a fork.
Place the potato on a serving dish, cut in 2 inch round pieces and fan out. Drizzle with honey and sprinkle with Allspice (or cinnamon).
Diabetic note: Cut the serving size in half for better blood sugar control, especially if consuming at a big holiday meal.

I loved baked sweet potatoes - they don't even need anything on them. I bake them in the microwave for a snack sometimes.

Never eaten sweet potato skins so this will be an adventure.
