Hearty Lentil Soup

- 1 cup dry lentils
- 5 cups water
- 1 garlic clove, crushed
- 1 tablespoon extra-virgin olive oil
- 1 cup chopped onion
- 1/2 cup thinly sliced celery
- 1 cup finely diced carrots
- 1 1/2 tablespoons tomato paste
- 1 bay leaf
- 1/8 teaspoon chili powder
- 1 1/2 teaspoons salt
- 1 1/2 cups canned, chunky, whole crushed tomatoes
- 1/2 cup fresh chopped parsley
Combine the lentils, water, garlic, olive oil, onion, celery, and carrots, and bring to a boil. Cover, reduce heat, and simmer for about 1 hour, stirring occasionally. Add remaining ingredients except parsley, and simmer 10 more minutes. Just before serving, add parsley. Serve hot.
