1. Saute onions in oil until tender. Remove from heat and mix in pimentos. 2. Blend cashews, water, and seasonings on high until creamy. 3. Add beans and cashew cream to sauteed mixture. Bring to a boil and reduce heat to medium for about 5 minutes. * Can also use pinto beans instead of navy beans.

Very quick and easy recipe to prepare. I did not use the navy beans in this recipe so far iv'e used pinto beans and cannelli beans. I found for the amount of beans called for in this recipe there was not enough liquid. I am thinking because of the type of beans I used. To compensate for this I added chicken broth to the cashew liquid. It turned out yummy!
