Black Bean Turtle Soup

- 1 tablespoon canola oil
- 1 1/2 cups chopped onion
- 4 cloves garlic, chopped
- 1 1/2 teaspoon cumin
- 1 tablespoon chili powder
- 1/2 teaspoon dried oregano leaves
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 cup diced red bell pepper
- 1/2 cup diced yellow pepper
- 4 1/2 cups black beans, low-sodium canned, drained
- 1 1/2 cups water
In a large pot over medium heat, cook onion in oil until tender, about 3-4 minutes. Stir in garlic, cumin, chili powder, oregano, cayenne pepper, salt, and diced peppers. In a blender, puree 1 1/2 cups of beans with half (3/4 cup) the water on high setting, about 30 seconds. Add bean mixture to pot. Add the rest of the water (3/4 cup) and remaining whole beans, un-blended to the pot and stir together. Reduce heat and simmer for 15 minutes, stirring often.

Actually tasted good. I added 1 jaepeno pepper, garnished soup with cilantro and lime juice to taste>
